5 Ways to Eat More Vegetables Today


I am a big advocate of vegetables. Eating more of them is easily the #2 rule of good nutrition. However, I do understand that they can be a little tricky, especially if you aren't used to eating them on a regular basis. So below I have found 5 ways to sneak in a few extra servings per day!


1. Add them to Sauce

Follow this recipe from A Kitchen Addiction to make a big batch of veggie-loaded spaghetti sauce! This recipe makes about 9 cups and can be stored in the fridge for up to two weeks.


2. Substitute them for noodles


Follow instructions from Elana's Pantry to make these gorgeous Zucchini noodles. Bonus points if you use veggie loaded sauce! ;) 

3. Have them for Breakfast 
Skip the sugar crash from pancakes and waffles with this Oven Omelet from Paleo Leap for a protein packed weekend breakfast. Make an extra to save for a quick, mess free breakfast during the week! 


4. Switch up recipes like tacos and sushi to make salads and bowls 
Taco's are quick to make, but I think this salad might be even quicker! Not to mention that it's loaded with vegetables and an avocado-lime dressing. Try this recipe from Paleo Newbie to add a healthy dose of fiber, antioxidants and micro nutrients for dinner tonight. 
Or try this Sushi Bowl from Budget Bytes to get your sushi fix while still getting your vegetables in. 



5. Load up your Soup 
Soup is a great way to get in more vegetables. This is my favorite recipe:
Serves: 1
1 Cup of butternut squash, cubed
1/2 Small onion, diced
1 cup of mushrooms
As many handfuls of kale as will fit in your soup pot 
Vegetable or chicken stock
A Dash of apple cider vinegar (seriously, just like a teaspoon or so!)
Optional: Dried cranberries (not pictured) and sunflower seeds to top it all off

Heat 1 tbsp of coconut oil/olive oil or butter
Add all vegetables except for kale. 
Add cumin, garlic powder, salt, pepper to taste
Add vegetable stock and bring to a boil 
simmer until squash is soft 
Remove from heat and add kale, let sit until bright green
Pour into a bowl, sprinkle with dried cranberries and sunflower seeds then enjoy! :)
